I would always go for whichever is the highest quality and whichever is the highest quality that you can afford. Sturgeon caviar is standard, but very expensive compared to most types of salmon roe. My problem with caviar comes down to the argument I always have with myself when buying expensive ingredients;

I like pink salmon caviar and order always through globalseafoods. I prefer products of high quality and the ones I am sure with. I have been purchasing caviar there for a couple of years already and should say I am pretty satisfied with quality and price
